Crock Pot Black Bean Chicken Recipe

Ingredients
  

  • 3 Boneless, skinless chicken breasts, frozen
  • 1 can Black Beans
  • 1/2 Packet of Taco Seasoning
  • 1 can Diced tomatoes with green chilies (Rotel tomatoes work great.)
  • Optional: Mexican Rice, Tortillas, Shredded Cheese

Instructions
 

  • Put black beans in bottom of crock-pot.
  • Place frozen chicken on top of beans.
  • Sprinkle with taco seasoning. (Use as much or as little as you want, according to your taste.)
  • Pour can of tomatoes with juice over chicken.
  • Cook 8-10 hours on low.
  • Shred chicken with fork and stir with beans and tomatoes.
  • Serve with rice and make into tacos, or make a chicken salad!

Notes

You can also use dry black beans and soak them overnight for this recipe. It's much healthier than using canned beans. I also recommend adding 1/3 cup water mid-day if possible to help keep the chicken moist.
